STRAWBERRY NEGRONI

Instructions
- Make the Strawberry Infused Campari about 3 days ahead of time. When you are ready to make the cocktail & the garnish, cut the strawberry (lengthwise or crosswise), and cut a notch in the strawberry, and set aside (optional).
- Fill a cocktail mixing glass half full with ice cubes, and add gin, sweet vermouth, and Strawberry Infused Campari. Stir the cocktail until well mixed and chilled (about 20 to 30 seconds), and strain into an ice filled 10 ounce rocks glass, and garnish the rim of glass with the strawberry slice (optional garnish). Serve immediately and enjoy!

Step by Step Instructions
STEP 1
Make the Strawberry Infused Campari about 3 days ahead of time. When you are ready to make the cocktail, for the garnish, cut 1 thick slice of fresh strawberry (lengthwise or crosswise), and cut a notch in the strawberry, and set aside (optional).

Fill a cocktail mixing glass half full with ice cubes, and add 1 ounce London dry gin, 1 ounce sweet vermouth, and 1 ounce Strawberry Infused Campari. Stir the cocktail until well mixed and chilled (about 20 to 30 seconds).

The perfect summer apéritif!
This Strawberry Negroni is the perfect apéritif to any spring or summer evening meal. This quintessential bitter Italian cocktail uses only 3 ingredients, and has a wonderful balance of bitterness and flavor to open up your palate before a delicious dinner.
Negronis are easy to make because they use equal amounts of gin, sweet vermouth, and Campari. Campari liqueur balances out the sweetness in a variety of cocktails, especially in a Negroni. Campari has a bitter linger on the palate, and many mixologists use it as a type of bitters in cocktails.
Instead of using the traditional Negroni ingredients, I decided to add a unique twist to this recipe by using my Strawberry Infused Campari. The first time I had a Strawberry Negroni was at a French bistro (yes, not an Italian restaurant) in Southern California. It was summertime and very hot, and that Strawberry Negroni really hit the spot! I asked the bartender how they made it and she told me they infused the Campari (some even use infused gin, which would also be tasty).
I set out to achieve the right amount of flavor and figured out the best technique to infuse the Campari. After a few attempts, I was able to get the right amount of strawberry flavor in my Strawberry Infused Campari without taking away from the Campari’s signature bitterness. My Strawberry Infused Campari turned out to be a great addition to the classic Negroni, and I hope you enjoy this cocktail as much as I do!
How do you ensure the best results from this recipe?
My 5 tips to making a Strawberry Negroni:
Use high quality spirits, as there are only three ingredients in this cocktail. There is no place for cheap alcohol in this drink!
Use a really good sweet vermouth. I prefer using Carpano Antica Formula Vermouth. It’s more expensive than Martini & Rossi Sweet Vermouth, but I feel that it makes a big difference in the flavor of this cocktail.
I used Bombay Sapphire gin in this cocktail. Any good quality London dry gin would work well for this drink. Other types of gin that contain more botanicals, would not work with the flavors in this cocktail.
Although you could make this drink without it, it’s really the Strawberry Infused Campari that kicks it up a notch. Make it ahead of time, and store it in the fridge for up to 6 months.
It’s time to customize and Pimp My Recipe.
Prep My Recipe:
Make it Classic: Just use the same quantities of each ingredient, but replace the Strawberry Infused Campari with Campari liqueur (not infused).
Make Ahead Instructions for Entertaining: Increase the quantities by the number of servings you need. Make the Strawberry Infused Campari at least 3 days ahead of time, and strain into a clean mason jar. Refrigerate until ready to use. A few hours before your guests arrive, make the cocktail by adding the gin, sweet vermouth, and Strawberry Infused Campari to a large pitcher. Stir, cover, and refrigerate. If using a garnish, pre-slice the strawberries just before the guests arrive (no more than 30 minutes before serving, and refrigerate in a Ziploc bag). As guests arrive, fill each glass with ice, stir the pitcher, and pour 3 ounces of the cocktail mixture into each glass. Garnish and serve!
