HEALTHIER LEMON MINT AIOLI

- Using a Microplane grater, grate lemon zest, and set aside. Chop fresh mint, and set aside. Add garlic cloves to a garlic press, and press to yield 1 teaspoon pressed garlic (or finely grate using a Microplane grater), and set aside.
- To a small glass mixing bowl with lid, add yogurt, mayonnaise, pepper, salt, and lemon zest. Using a fine mesh strainer, strain lemon juice into the bowl. Then add pressed garlic and chopped mint, and mix well with a silicone spatula until fully combined. Cover with lid, and refrigerate for a minimum of 1 hour (see Note #1).
- Once the aioli has had time to chill, serve as a dip, or with your favorite burgers, grilled chicken sandwich, or our Turkey Feta Burgers, and enjoy!
Notes
- This aioli can be enjoyed within 1 hour of making it; however, it tastes best when it has a little time to allow the ingredients to meld. If you have the time, we recommend making this Healthier Lemon Mint Aioli about 1 day (or the morning) before serving.
- Can be made ahead of time and stored refrigerated in an airtight container for up to 3 days.
- Makes 10 servings (1 ½ tablespoons per serving).

Step by Step Instructions
STEP 2
To a small glass mixing bowl with lid, add ⅓ cup plain nonfat Greek yogurt (0%), ⅓ cup real mayonnaise, ⅛ teaspoon ground white pepper, 1 generous pinch of Himalayan fine pink salt, and 1 teaspoon fresh lemon zest (see Note below). Using a fine mesh strainer, strain 1 teaspoon fresh lemon juice into the bowl. Then add pressed garlic and 3 tablespoons chopped fresh mint.
Note: We used this Microplane grater to grate the lemon zest.
STEP 3
Mix well with a silicone spatula until fully combined. Cover with lid, and refrigerate for a minimum of 1 hour (see Note below).

SERVING SUGGESTIONS

A Tangy Greek-Style Spread!
I’ve never been a huge fan of mayonnaise based dips or spreads, but our Healthier Lemon Mint Aioli is a game changer! It has all the flavor but only half the fat of traditional aioli recipes. And, it tastes so bright and fresh that it livens up anything you spread it on.
Although aioli is traditionally made with 100% mayonnaise, we wanted a lighter and healthier version without compromising on taste. After a few attempts in the PMR Test Kitchens, we feel we’ve achieved the perfect Greek-style topping for our Turkey Feta Burger. This Healthier Lemon Mint Aioli really does pull all the flavors together in our turkey burger.
We discovered that these Mediterranean ingredients are also amazing on beef burgers and grilled chicken sandwiches. That said, feel free to use it as a dip with anything you like! Full of garlicky and lemony flavor with a finish of fresh mint, these ingredients come together to make this a super yummy spread for anything you can think of.
How do you ensure the best results from our recipe?
Our 3 tips to making a yummy Healthier Lemon Mint Aioli:
We used Best Foods real mayonnaise and Fage 0% plain Greek yogurt for this recipe. Use organic lemons, garlic, and mint to get the best results.
Wash your fresh mint leaves, and let them fully dry before chopping. Use a super sharp knife, and sharpen it just before chopping the fresh mint, so it doesn’t bruise the delicate leaves.
To let the flavors fully meld (and mellow a bit), make this aioli 1 day prior to serving.
It’s time to customize and Pimp Our Recipe.
Pimp Our Recipe:
Make it Even Healthier: Omit the real mayonnaise and replace it with Greek yogurt. You will use a total of ⅔ cup of plain 0% Greek yogurt for this version of the recipe.
Make it Traditional: Omit the Greek yogurt and replace with real mayonnaise. You will use a total of ⅔ cup of real mayonnaise for this version of the recipe.
Make it Just a Little Richer, but Still Healthy: Replace the 0% plain Greek yogurt with 2% or 5% plain Greek yogurt. We love using Fage Greek yogurt for this recipe.
Make it Milder: Raw garlic does have a bite to it, which is why this aioli needs a little time to allow the flavors to meld and the garlic to mellow. If raw garlic is too much for you, replace it with 1-2 teaspoons of roasted garlic.
Make it Spicy: Add ⅛ teaspoon (or more if you want it crazy spicy) of crushed red pepper flakes to the aioli.
