SPARKLING PINEAPPLE MOCKTAIL (Non-Alcoholic)
Ingredients
Instructions
- To a high speed blender cup (see Note #3), add fresh cut pineapple. Blend until pineapple is completely puréed, and it is liquidy and frothy (about 30 to 60 seconds). Set aside (and stir or whisk well just before using).
- Using a juicer, squeeze lime juice and orange juice, and add to a cocktail shaker. Then add Pineapple Simple Syrup, and only 2 ounces pineapple purée. Add ice cubes, cover, and shake vigorously (about 15-20 seconds).
- Fill a 19 ounce stemless wine glass with fresh ice cubes, strain the mocktail into the glass, and top with club soda. Add a straw, and garnish with wedges of lime, orange, and/or pineapple (or make it fun and add an umbrella!), and serve immediately!
Notes
- I like to make extra pineapple purée (about 2 cups of fresh pineapple), and store it in a mason jar. I use fresh pineapple purée for other recipes like smoothies or cocktails. For best freshness, store pineapple purée in a mason jar in the refrigerator for up to 2 days.
- As a substitution for the Pineapple Simple Syrup, you can use ¾ ounce of either simple syrup or agave nectar. Agave will add warm caramel notes to this drink, and simple syrup will not add any flavor (just sweetness).
- Use a high speed blender to purée the pineapple. Both the NutriBullet high speed blender, and the Vitamix high-speed blender work extremely well for this recipe.
- Makes 1 serving (about 8 ounces, or 18 ounces with ice).

Step by Step Instructions
Pineapple Purée
STEP 1
To a high speed blender cup (see Note below), add 1 cup of fresh cut pineapple that has been cut into 1 inch pieces. Blend until pineapple is completely puréed, and it is liquidy and frothy (about 30 to 60 seconds). Set aside (and stir or whisk well just before using).
Note: Use a high speed blender to purée the pineapple. Both the NutriBullet high speed blender, and the Vitamix high-speed blender work extremely well for this recipe.
Mocktail
STEP 1
Using a juicer, squeeze 1 ounce fresh lime juice from 1-2 limes, and add to a cocktail shaker. Squeeze 1 ounce fresh orange juice, and add to the cocktail shaker. Then add ¾ ounce Pineapple Simple Syrup (see Note below), and 2 ounces pineapple purée. Add ice cubes, cover, and shake vigorously (about 15-20 seconds).
Note: As a substitution for the Pineapple Simple Syrup, you can use ¾ ounce of either simple syrup or agave nectar. Agave will add warm caramel notes to this drink, and simple syrup will not add any flavor (just sweetness).
STEP 2
Fill a 19 ounce stemless wine glass with fresh ice cubes, strain the mocktail into the glass, and top with 2 ounces club soda.
SERVING SUGGESTIONS
Add a straw, and garnish with wedges of lime, orange, and/or pineapple (or make it fun and add an umbrella!), and serve immediately!

Excite your taste buds with this sensational non alcoholic Sparkling Pineapple Mocktail! This refreshing and vibrant drink combines the lusciousness of fresh pineapple, a little lime, some orange, a hint of sweetness from my Pineapple Simple Syrup, and a touch of fizz. These flavors come together to make the most enjoyable cool drink that is perfect for summertime.
Aside from hydration, this sweet and delicious mocktail sneaks in some wonderful health benefits from the fresh fruit and juices.
Fresh pineapple, lime juice, and orange juice are all very rich in Vitamin C, which supports immune health, promotes collagen production, and acts as an antioxidant.
Pineapple has SO many health benefits other than Vitamin C. It contains bromelain, which is an enzyme known for its anti-inflammatory properties. It also aids in digestion, reduces inflammation, and is a good source of dietary fiber. Pineapple even helps regulate blood sugar.
Despite being acidic in nature, fresh lime juice has an alkalizing effect on the body. It helps maintain the body's pH balance and supports overall well-being. The high levels of Vitamin C in citrus fruit (specifically limes and lemons) also help to produce glutathione (an antioxidant produced by the liver), which can boost the liver’s ability to detoxify and eliminate pollutants from your body.
Although this mocktail gets most of its sweetness from natural sugars, this drink does contain a small amount of simple syrup that is made with refined sugar; therefore, I cannot claim that it is a super healthy drink. That said, with the above mentioned health benefits from the fresh fruit and juices, this is a virtually guiltless non-alcoholic beverage that can be enjoyed to the fullest!
How do you ensure the best results from this recipe?
My 3 tips to making this Sparkling Pineapple Mocktail (Non-Alcoholic):
High quality, fresh organic fruit. For best results, please use fresh fruit (not store bought juices).
Cut fresh pineapple for your purée. It makes a huge difference in the flavor and health benefits of this mocktail. It only takes about 5 minutes to cut the pineapple, and only 1 minute to purée the fruit. Trust me, it’s worth it!
Because you are using fruit juices, it’s best to use a cocktail shaker and vigorously shake the mocktail ingredients with ice. This helps the citrus juices to blend together. Otherwise, the ingredients will likely separate in your glass.
It’s time to customize and Pimp My Recipe.
Pimp My Recipe:
Make it Spicy: Using protective gloves, cut 3 slices of fresh jalapeño (plus 4-6 more slices for optional garnish), remove seeds (optional), and set aside. In a cocktail shaker, muddle 2 jalapeño slices (deseeded) with the lime juice and Pineapple Simple Syrup. Then add the other ingredients, and shake, and strain into an ice filled glass. Drop a couple of jalapeño slices into each glass for extra spiciness!
Make it Sweeter: Adjust the amount of Pineapple Simple Syrup from ¾ ounce to 1 ounce (or to taste).
No Time to Make Pineapple Simple Syrup? Replace the Pineapple Simple Syrup with ¾ ounce agave nectar. It will add warm caramel notes to this drink. You can also use ¾ ounce simple syrup instead.
